Boring But Important Part 3: Soft Cooked Egg
WHAT IT IS: a perfectly delicate way to eat an egg. Cooked whites with a runny yolk. this method uses steam, not boiling water, to get the ideal textures. (nod to America's Test Kitchen, again)
INGREDIENTS:
eggs
1/2 inch of water
HOW TO MAKE IT:
boil water in a saucepan. once water is boiling, carefully add as many eggs as you want (there is plenty of power in the steam to cook a bunch of eggs). cover for 6 mins and 30 secs. Remove from heat. Run eggs under cold tap water for 30-60 seconds. Carefully peel and serve. I served this at breakfast with caremlized onions and cremini mushrooms and toast.
