Ingredients: 1 block extra firm tofu, pressed and sliced into strips. 1 tablespoon soy sauce. 1 tablespoon sriracha sauce. 1 tablespoon lime juice. 1 tablespoon maple syrup. 1 tablespoon vegetable oil. 1/2 cup shredded carrots. 1/2 cup shredded purple cabbage. 1/4 cup chopped fresh cilantro. 8 small corn tortillas. 1/4 cup roasted peanuts, chopped for garnish. 1/4 cup peanut butter. 2 tablespoons soy sauce. 1 tablespoon rice vinegar. 1 tablespoon maple syrup. 1 teaspoon sriracha sauce. 2 cloves garlic, minced. 1/4 cup water.
Instructions: Soy sauce, Sriracha sauce, lime juice, maple syrup, and vegetable oil should all be mixed together in a bowl. For at least 30 minutes, let the tofu strips soak in the mixture. Shred the carrots, purple cabbage, and cilantro and put them all in a different bowl. Over medium-low heat, cook the marinated tofu strips for three to four minutes on each side until they turn golden brown. You can heat up corn tortillas in a pan or the microwave. Mix peanut butter, soy sauce, rice vinegar, maple syrup, sriracha sauce, minced garlic, and water in a bowl until the sauce is smooth. To make tacos, put tofu strips on warm tortillas and then add shredded vegetables and peanut sauce on top. Add chopped roasted peanuts as a garnish. Serve right away and enjoy!
