@Regranned from @chefbabette - Vegan Spinach Enchilada Spinach Enchilada To make Enchilada sauce: 10-15 California chili (dried) Enough water to boil peppers 6 tomatoes 3 tsp Granulated garlic 1 tbsp Cumin 2-3 tbsp Braggs Liquid Aminos 2 tbsp agave Blend all ingredients set aside in fridge until room temperature. To make ground tofu: 3 pounds extra firm tofu (Trader Joe’s sells extra firm) 1/2 cup Mexican seasoning (frontier herbs) 2 tbsp Braggs Liquid Aminos 1 cup chopped green onion 1 cup diced bell pepper 1 cup diced red onion Using a food processor equipped with the “S” blade attachment, cut tofu in pieces and add Mexican seasoning pulse tofu being careful not to make sticky, transfer ground tofu to a bowl add Braggs, green onion , red onion and bell pepper add 1 1/2 cups cheese sauce to ground tofu. Vegan cheese sauce: 2 cups water 2 cups non dairy milk 2 tbsp Braggs 2 tbsp yellow miso 2 packs vegan cheddar cheese ( follow your heart) Blend until creamy Other ingredients needed: Baby spinach 4-6 cups 2 packs grated cheese (total 4 packs for this recipe) To build a 4qt Casserole Spray pan with oil Add 1 1/2 cups Enchilada sauce to pan place 4 corn tortillas on the bottom of the pan add more sauce then layer with 2-3 cups ground tofu, a layer of grated cheese, a layer of baby spinach add Enchilada sauce and cheese sauce! Heat 15 corn tortillas so that you can roll ground tofu mix in tortillas and place them side by side on the spinach cover with Enchilada sauce and cheese sauce cover with the remainder of ground tofu layer with grated cheese bake covered at 300-325 or until cheese melts! #vegan #spinachenchiladas #organic - #regrann
