Ingredients: 4 large eggs. 1 tablespoon coconut oil. 1 teaspoon ground turmeric. 1 cup fresh spinach, chopped. 2 ounces goat cheese, crumbled. Salt and pepper to taste.
Instructions: Put the eggs, ground turmeric, salt, and pepper in a bowl and beat them together. Warm up the coconut oil in a skillet that doesn't stick over medium fire. Add the beaten eggs to the pan and swirl them around to make them spread out evenly. Let it cook for two to three minutes, or until the edges begin to set. Goat cheese and chopped spinach should be spread on one half of the omelette. Cover with the other half and cook for two more minutes, until the cheese melts and the omelette is fully cooked. After putting the omelette on a plate, cut it into wedges and serve it hot.
