For special events like May Days, these oven-puffed pancakes are a great treat. They are easy to make and turn out golden and puffed up. With fresh strawberries and powdered sugar on top, they're a great way to get ready for spring.
Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1/2 teaspoon salt. 1 cup milk. 2 large eggs. 1 teaspoon vanilla extract. 2 tablespoons unsalted butter. 1 cup fresh strawberries, sliced. Powdered sugar for garnish. Maple syrup for serving.
Instructions: Turn on your oven and heat it up to 425F 220C. Put the flour, sugar, salt, milk, eggs, and vanilla extract in a blender. Use a blender to make the batter smooth. Warm up a 10-inch oven-safe skillet or baking dish by putting it in a hot oven for a few minutes. When you add the butter to the hot pan, swirl it around to cover the bottom evenly as it melts. Put the batter that you have already made into the hot pan with the melted butter. After the oven is hot, bake the pancake for 15 to 20 minutes, or until it's puffed up and golden brown around the edges. Take the pancake out of the oven and put strawberry slices on top of it. Sprinkle with powdered sugar and serve with maple syrup right away. Enjoy your springtime strawberry oven-puffed pancakes!
