Spruce Beer in Early America

it’s not Sprite, it’s spruce beer!
First developed by Canada’s indigenous peoples, spruce beer was commonly used to prevent scurvy, even by French navigator Jacques Cartier. Today, it continues to have a following.
Friend and I came across this gem on one of our weekend drives around the province and made a bet. If you want to find out what a car tree air freshener tastes like in liquid form, just drink this Spruce Beer crap. Blarg. We both lost this bet and 0.99, lol.
Spruce beer was more common in the 18th and 19th centuries, when hops were not readily available in North America. In this recipe, the phrase “the Essence,” refers to spruce essence, but feel free to just throw in a few sprigs from a Christmas tree.
For a cask of 30 Gallons take 12 oz. of the Essence & 2 Gallons of Mollasses: mix both well together in 5 or 6 Gallons of warm or cold water, according to the Climate. After the liquor has been well stirred till it bears a froth, pour it into the Cask, which fill up with water. To make it ferment put for the first time a pint of yeast: afterwards the grounds of the same Cask will serve for the next brewing. Shake the Cask well & set it by for 2 days to work: after this let it be bunged up & it will be fit for bottling - The Bottles should be put into a cool Cellar.

Three products from Empire Bottling Works in Rhode Island this week, including their Spruce Beer. There was a little technical problem with the new camera feed so there's a moment of blank video (audio continues) toward the middle. Sorry about that, but it's better than being interrupted by NPR again.

Like a fine Malört, Spruce Beer should only be drunk by the uninitiated. Pairs well with Black Jack Gum and self-hatred. This stuff tastes like carbonated Vicks VapoRub. There is a bit of citrus here, and its effervescence is somewhat refreshing. But there’s just no getting around the pine tar flavor.
