Start your day with this delicious and nutritious breakfast sandwich. Packed with protein, veggies, and whole grains, it's the perfect way to fuel your morning.
Ingredients: 2 whole wheat English muffins. 4 large eggs. 1/4 cup spinach, chopped. 1/4 cup red bell pepper, diced. 1/4 cup onion, diced. Salt and pepper to taste. 2 slices reduced-fat cheddar cheese. Cooking spray.
Instructions: Put a nonstick skillet on medium heat and spray it with cooking spray. Add salt and pepper to taste and whisk the eggs in a bowl. After beating the eggs, add them to the pan and don't stir them until the edges start to set. Add the chopped onion, red bell pepper, and spinach to the eggs slowly. Keep cooking and folding the mixture in half every so often until the eggs are done but still have some moisture left in them. Toast the English muffins until they are just barely golden brown. On the bottom half of each English muffin, put a slice of low-fat cheddar cheese. The scrambled egg mixture should be spread out evenly among the muffins. Put the other halves of the English muffins on top to make sandwiches. Enjoy your healthy breakfast sandwich while it's still hot!
