This Baked Potato Stuffing recipe is the epitome of comfort food. Creamy mashed potatoes loaded with cheese, sour cream, and butter, baked until golden and bubbly. It's the perfect side dish to accompany meats all year round, providing warmth and satisfaction with every bite.
Ingredients: 4 large baking potatoes. 1/2 cup sour cream. 1/4 cup butter. 1/4 cup milk. 1 cup shredded cheddar cheese. Salt and pepper to taste. Optional toppings: chopped chives, crispy bacon bits.
Instructions: Preheat the oven to 400F 200C. Wash and scrub the potatoes thoroughly, then pierce each potato several times with a fork. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until tender when pierced with a fork. Remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh into a mixing bowl, leaving a thin layer of potato inside the skin. Add sour cream, butter, milk, and half of the shredded cheese to the potato flesh in the bowl. Mash and mix until smooth and creamy. Season with salt and pepper to taste. Spoon the mashed potato mixture back into the potato skins, dividing it evenly among them. Sprinkle the remaining shredded cheese on top of each stuffed potato. Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly. Serve hot, garnished with optional toppings like chopped chives and crispy bacon bits.
