So I’m basically obsessed with this recipe, which came to me in a vision a few weeks ago. Crockpot Beer Chicken
I finally used my crockpot!
It was as easy and glorious as anticipated: threw 2 giant chicken breasts into crock pot with 3/4 cup of beer [I used Domaine Dupage from Two Brothers] and some taco seasoning and WABLAM!
I made the chicken following the directions from this Crockpot Cheddar Beer Chicken recipe, but I didn't add as much cheese because I wasn't eating it immediately and planned to use the same chicken for non-tacos too--salads, wraps, sandwiches etc.
Here's the adapted recipe:
2 ginormous boneless skinless chicken breasts from Paulina Meat Market -- they sell the breasts still in a pair, so at the supermarket where they usually split them you're looking for 4
3/4 cup beer [A french farmhouse style ale maaay have been a strong choice but it's still totally delicious.]
1 tablespoon chili powder
1 1/2 teaspoons cumin
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
pinch of cayenne pepper--I skipped this bc I didn't have any cayenne in the house
1/2 teaspoon salt
1/2 teaspoons pepper
3/4 cup of shredded cheese--I did about half of this
In a bowl, mix together chili powder, cumin, garlic, onion, paprika, cayenne, salt and pepper. [If you skip this for pre-made taco seasoning/are a male with no spices in your house, I recommend Goya's packets]
Separately, measure out 3/4 cup of beer, and whisk in 1 1/2 tablespoons of taco seasoning.
Place chicken in the crockpot and dump in beer with seasoning. Cook on low for 7-8 hours or high for 4 hours. Enjoy the rest of that bottle of beer or maybe the whole six pack while you wait.
When the time is up/you've grown impatient, dig into the chicken breasts with two forks or tongs and shred the bejeezes out of it. It will suddenly look like you have 3x more chicken than you thought you did 5 minutes ago.
Season with additional taco seasoning to your liking, then let sit in the crockpot for another 5-15 minutes or so.
If you're serving now and want all that cheese: Toss in 3/4 of cheddar cheese and mix it up really quickly before transferring the chicken to a serving bowl--cheese stuck to your crockpot is no bueno.
Make your tacos or other things!
