Ingredients: 1 lb ground chicken. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup chopped fresh parsley. 1/4 cup minced onion. 1 clove garlic, minced. 1 egg. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1 cup marinara sauce. 8 small taco shells. 1 cup shredded mozzarella cheese. Sliced green onions for garnish. Sour cream for serving. Salsa for serving.
Instructions: In a mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, chopped parsley, minced onion, minced garlic, egg, salt, and black pepper. Mix well until all ingredients are fully incorporated. Form the mixture into small meatballs, about 1 inch in diameter. In a large skillet, heat some oil over medium heat. Add the chicken meatballs and cook until browned on all sides and cooked through, about 8-10 minutes. Pour the marinara sauce over the cooked meatballs and simmer for an additional 5 minutes, or until the sauce is heated through. While the meatballs are simmering, warm the taco shells in the oven according to package instructions. To assemble the tacos, place a few meatballs with sauce into each taco shell. Sprinkle shredded mozzarella cheese on top of the meatballs. Garnish with sliced green onions. Serve the chicken meatball tacos with sour cream and salsa on the side.
