Ingredients: 2 large tomatoes, diced. 1 cucumber, sliced. 1/4 red onion, thinly sliced. 1/4 cup fresh basil leaves, chopped. 2 tablespoons extra virgin olive oil. 1 tablespoon red wine vinegar. 1 teaspoon honey. Salt and pepper to taste.
Instructions: Dice the tomatoes, slice the cucumber, thinly slice the red onion, and chop the basil leaves. Put them all in a large bowl. Mix the honey, red wine vinegar, extra virgin olive oil, salt, and pepper in a separate small bowl using a whisk. Add the salad ingredients to the dressing and mix them together gently.
