Ingredients: 4 chicken breasts. 1 can artichoke hearts, drained and quartered. 1 lemon, sliced. 1/2 cup chicken broth. 3 cloves garlic, minced. 1 teaspoon dried oregano. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Season chicken breasts with salt, pepper, and dried oregano. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown on both sides. Transfer chicken to a slow cooker. Add artichoke hearts, lemon slices, minced garlic, and chicken broth to the slow cooker. Cover and cook on low for 4-6 hours or until chicken is cooked through and tender. Serve hot, garnished with fresh parsley if desired.
