Traditional birria tacos are made in a tasty and satisfying way with these Low Carb Norma Over The Top Birria Tacos. They are perfect for people who follow a low-carb diet because they are made with tender beef chuck roast and a tasty chili sauce.
Ingredients: 2 lbs beef chuck roast. 2 dried guajillo chilies. 2 dried ancho chilies. 1 onion, chopped. 4 cloves garlic, minced. 1 tsp ground cumin. 1 tsp dried oregano. 1/2 tsp ground cloves. 4 cups beef broth. Salt and pepper to taste. 1/2 cup chopped fresh cilantro. 1/2 cup diced onion for garnish. 1/2 cup crumbled queso fresco cheese. Low-carb tortillas.
Instructions: Use medium-high heat to warm up a big skillet. In the pan, toast the dried chilies for 30 seconds on each side until they start to smell good. Take it off the heat. Take out the chilies' stems and seeds, and then put them in a bowl. Put hot water over them and let them soak for 15 minutes, or until they get soft. Season the beef chuck roast with salt and pepper while the chilies soak. Set a big pot over medium-high heat and brown the roast on all sides. Take the roast out of the pot and set it aside. Put the chopped onion and garlic in the same pot. Saut them for a few minutes, or until they clear up. It's time to blend the chilies. Put them in a blender with the sauted onion and garlic, ground cumin, dried oregano, ground cloves, and 2 cups of beef broth. Mix the ingredients together until the sauce is smooth. Put the beef roast back in the pot after it has been seared and pour the chili sauce over it. Add the rest of the beef broth and mix it in well. Once the mixture starts to boil, lower the heat, cover, and let it simmer for two to three hours, or until the beef is soft and can be shred with a fork. Remove the beef from the pot when it's soft and shred it with two forks. Put the shredded beef back in the pot and let it cook on low heat for another 15 to 20 minutes so the flavors can soak in. You can use a dry skillet or the microwave to warm up the low-carb tortillas. Put some birria beef on each tortilla to start putting the tacos together. Chopped cilantro, diced onion, and crumbled queso fresco should be put on top. Serve the Over The Top Birria Tacos hot, and if you want, you can dip them in more birria sauce.
