This tasty and filling red wine roast chicken is suitable for both special occasions and a casual dinner at home. It is also Paleo-friendly. A succulent and tender roast chicken that is sure to impress is the result of the red wine marinade infusing the chicken with rich flavors.
Ingredients: 1 whole chicken about 4-5 pounds. 2 cups of red wine. 3 cloves of garlic, minced. 2 sprigs of fresh rosemary. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Preheat your oven to 375F 190C. In a bowl, combine the red wine, minced garlic, and rosemary sprigs. Rinse the chicken and pat it dry with paper towels. Season the chicken inside and out with salt and pepper. Place the chicken in a roasting pan and drizzle it with olive oil. Pour the red wine mixture over the chicken, making sure to coat it evenly. Cover the roasting pan with aluminum foil and roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165F 74C and the chicken is cooked through. Remove the foil during the last 30 minutes of cooking to allow the skin to brown and crisp up. Once done, let the chicken rest for 10-15 minutes before carving. Serve the red wine roast chicken with the pan juices as a delicious Paleo-friendly dish.
