Ingredients: 1/2 cup mayonnaise. 2 tablespoons ketchup. 2 tablespoons sweet pickle relish. 1 tablespoon finely chopped onion. 1 tablespoon white vinegar. 1/2 teaspoon sugar. 1/4 teaspoon salt. 1/4 teaspoon pepper. 4 cups mixed greens lettuce, spinach, arugula, etc.. 1 cup cherry tomatoes, halved. 1/2 cup cucumber, sliced. 1/4 cup red onion, thinly sliced. 1/4 cup grated carrot. 1/4 cup hard-boiled eggs, chopped. 1/4 cup crumbled bacon optional. 1/4 cup shredded cheddar cheese optional.
Instructions: In a small bowl, combine mayonnaise, ketchup, sweet pickle relish, chopped onion, white vinegar, sugar, salt, and pepper. Mix until well blended to create the Thousand Island dressing. In a large salad bowl, toss the mixed greens, cherry tomatoes, cucumber, red onion, grated carrot, and chopped hard-boiled eggs. Drizzle the prepared Thousand Island dressing over the salad and gently toss to coat the ingredients evenly.
