Thukpa, Tibetan Noodle soup 🍲 (Vegan)
I've been eating Thukpa since I was a kid and I have developed a lot of respect for this dish over the years. It is humble, nourishing and easy to make. Its origin might be Tibetan but it's cooked and loved by everyone in the Himalayan region.
Thukpa is essentially a non-vegetarian dish cooked with Yaksha or Yakmeat but they also have a vegan version which served to Monks.
Below recipe is something which I learned from a Tibetan friend and I'm happy to share it with everyone 🙂
So, First I washed and chopped my vegetables. Here I used 1 cup raw papaya, 1 cup roughly chopped Cabbage, 1 green bell pepper, 2 skinned and chopped tomatoes, 1 sliced red onion, 1 cup corn kernels, 1 cup thinly sliced carrot, chopped ginger and garlic (according to your liking), Chopped coriander and chopped spring onions for garnish.
If you don't have raw papaya its ok. It's just a substitute for meat. Also, you can add spinach or bokchoy to add more greens.
To start with, I heated 1 tablespoon of oil in a pot and added sliced red onion. Cooked it until it turned slightly pink. Then, I added the chopped tomatoes, raw Papaya and salt. Mixed it well and cooked it until papaya was tender. Then, I added other vegetables like carrots, cabbage, bell peppers and corns. Gave it a stir and cooked for another 2 minutes and added water. Don't cook these vegetables too much to retain the crunch.
After that, I added 1 teaspoon of salt and 1 teaspoon of black pepper. You can adjust seasoning according to your liking. It is also the time to add the noodles, ginger and garlic. Adding ginger and garlic, in the end, makes your soup more aromatic. Tibetans use handmade thick noodles but here I'm using thin noodles which do not take much time to cook. You can also use instant noodles.
After a boil my noodles were cooked so I served it immediately and garnished with spring onions and coriander leaves.
This soup is so healing 🙏. Really blessed to have learned this recipe 🥰🥰🥰
