Ingredients: 1 cup all-purpose flour. 1/2 cup unsalted butter, softened. 1/3 cup granulated sugar. 1/2 teaspoon vanilla extract. 1/2 cup semisweet chocolate chips, melted. 1/4 cup cherry preserves.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Melt the butter and mix it with the sugar in a bowl until the mixture is light and fluffy. Mix the flour in slowly while adding the vanilla extract until a dough forms. Roll out small pieces of dough into balls that are 1 inch across. Leave space between the dough balls when you put them on the baking sheet that has been prepared. Make a hole in the middle of each dough ball with your thumb or the back of a spoon. After the oven is hot, bake the cookies for 10 to 12 minutes, or until they are just beginning to turn golden. Take the cookies out of the oven and leave them on the baking sheet to cool for a while. In 20-second bursts, stir the chocolate chips in a bowl that can go in the microwave until they are smooth and melted. Place a small amount of melted chocolate in the middle of each cookie hole with care. Put a little cherry preserves on top of the chocolate that has melted in each cookie. Let the cookies cool all the way down so that the cherry and chocolate preserves can set. After the cookies have cooled and set, put them on a platter to serve.
