Creamy mashed potatoes made in a crockpot that can be made ahead of time and frozen for later use. This recipe is great for busy days or making meals ahead of time.
Ingredients: 5 lbs potatoes, peeled and diced. 1 cup chicken broth. 1 cup water. 1/2 cup unsalted butter. 1 cup sour cream. 1/2 cup milk. Salt and pepper to taste.
Instructions: Add chicken broth, water, butter, diced potatoes, and stir. The potatoes should be soft after 4 to 5 hours on high or 7 to 8 hours on low. Use a potato masher or fork to mash the potatoes right in the crockpot. Mix in the milk and sour cream until everything is smooth and creamy. Add pepper and salt to taste. You can serve it right away or let it cool completely before putting it in containers that can go in the freezer. Put a label on it and freeze it for up to three months. Let it thaw overnight in the fridge, and then heat it up in the microwave or on the stove until it's hot all the way through.
