Yes I’m still here... One of the most common phrases I heard from week one of quarantine, was “I’ve gained weight”! I never really cared about my weight per se, but about health in general. Being pre diabetic, I’m typically careful with what I eat and the times when I’m not careful and my glucose levels are less than desirable, my throat tightens and I’m overwhelmed with guilt. Bread has (had) always been on the guilty list. I can tell you though, that something wonderful happened during this quarantine! I was gifted a blessed, hyperactive sourdough starter. Affectionately, I was gifted a sourdough MOTHER – aka the levain, wild yeast, bacteria. @theapiarylb reassured me that sourdough bread is low in Phytate making it more nutritious and far easier to digest; hence, it would also be diabetic friendly since during long-fermentation it lowers the glycemic index. I started making basic sourdough bread and developed into making more complex sourdough breads. I can gladly tell you now that my sugar has not spiked ever since, despite my generous daily servings! HA!!! To say that this is by far, the most delicious bread in the world, is definitely an understatement. The past two months, it is the spirit of this beautiful, natural and ancient yeast that nourished me. Not all bacteria are bad, right?
