If someone creates tokens that another player controls, do they remain in play if the player who made them leaves the game?

Tokens are owned by the player under whose control they enter the battlefield. They won’t leave the game if the player whose effect created them leaves the game as long as they didn’t first enter the battlefield under that player’s control.

If I play Zedruu and then an Akroan Horse, do I own the tokens my opponents control that are created by the horse?

You own the tokens that enter the battlefield under your control. You don’t own the tokens that other opponents get from the Horse.
