holy SHIT. ive never been able to finish a bag of regular TAKIS because they were too spicy and there wasnt enough lime to round it out, but this #traderjoesfind is less spicy with a bunch more lime. I ate a whole bag with no trouble. This is the best vegan enchilada casserole. Here's how I made it. This has three layers. Chorizo tofu scramble, green bell pepper enchilada sauce, creamy refried black beans, plus the vegan shredded cheese. Here's the ingredients for the chorizo tofu scramble: (BTW you can add whatever veggies you want. Such as spinach, tomatoes, etc.) 1 medium yellow onion 1 pack extra firm tofu (crumbled) 1/2 cup nutritional yeast 1 tablespoon garlic powder 1 tablespoon turmeric powder 1 pack vegan chorizo 3 tablespoon veggie stock First I sauteed the onions, until translucent, then added all the ingredients listed above. I stirred on medium heat, for a few minutes, until all the ingredients combined. For the enchilada sauce, I sauteed two chopped green bell peppers, until well cooked. Then I added a can of 28 oz medium spicy green enchilada sauce. Set aside. For the creamy refried beans, on medium heat, in an oiled pan, I added 28 oz of black beans and 1/2 cup of nutritional yeast, stirring until warm. Then I turned off heat and used a potato masher to mash it well, until creamy. You'll need two bags of Trader Joes corn tortillas and two packs of shredded vegan cheese. In a 7X12 pan, I first layered with the green sauce, then I layered with Trader Joes corn tortilla, making sure all the corners of the pan were covered in it. Then I spread a layer of refried beans and sprinkled cheese. Then a layer of tortillas, then a layer of the tofu scramble, then another layer of tortillas, then enchilada sauce and sprinkled cheese on top. I popped it in the oven on 350 degrees F, for 20 minutes. I was able to make two casseroles. One to eat tonight and one for tomorrow.
