Sweet Potato Tuna Melts
A tasty and healthy variation on the traditional tuna melt sandwich is the sweet potato tuna melt. The sweet potato rounds that are used as the base give this hearty dish extra sweetness and vitamins. Perfect for a quick dinner or lunch that fills you up!
Ingredients: 2 medium sweet potatoes, sliced into 1/2 inch rounds. 1 can 5 oz tuna, drained. 1/4 cup mayonnaise. 1/4 cup diced red onion. 1/4 cup diced celery. 1 tablespoon Dijon mustard. Salt and pepper to taste. 1 cup shredded cheddar cheese.
Instructions: Turn on the oven and heat it up to 400F 200C. Put rounds of sweet potato on a baking sheet that has parchment paper on it. For 20 to 25 minutes, or until soft. Put the celery, red onion, mayonnaise, salt, and pepper in a bowl and mix them together. Put some of the tuna mixture on top of each sweet potato round. Add crumbled cheddar cheese on top of the tuna mix. Put it back in the oven and bake for another 5 to 7 minutes, until the cheese melts and starts to bubble. Enjoy while hot!

Ingredients: 2 cans 6 ounces each tuna, drained. 1/4 cup mayonnaise. 1/4 cup minced red onion. 2 tablespoons minced celery. 2 tablespoons minced fresh parsley leaves. 1 tablespoon fresh lemon juice. 1/4 teaspoon salt. 1/4 teaspoon freshly ground black pepper. 4 slices bread. 4 slices Swiss cheese. 4 slices tomato.
Instructions: In a mixing bowl, combine the tuna, mayonnaise, red onion, celery, parsley, lemon juice, salt, and pepper. Preheat the broiler. Toast the bread slices under the broiler on one side only. Top the untoasted side of each slice with a quarter of the tuna mixture. Place a slice of cheese on top of each portion of tuna mixture. Place the slices of tomato on top of the cheese. Return the sandwiches to the broiler and cook until the cheese is bubbly and lightly golden brown. Serve hot.
