#Turbomix! It is not a blender, it is not a mixer, it is not a cutter. IT IS AN #EMULSIFIER! It has three main characteristics: - really high speed: 12000 rpm - it works by its own - it destroys the molecules of your mix. It has two different mechanical arms, one for gelato and the other for sorbets (and an optional blender, as third one), that can be changed quickly, then you just have to set for how long you want to emulsify your mix and activate it. The rest will be done without your help. The main reasons to start using this technology are: - you'll save a lot of time (time means money) because you won't have to waste it keeping the mixer by hand during the process. You will be able to do something else. - you will improve a lot the structure of your gelato, it will be much finer and smoother - you will increase the overrun and its stability because you will be able to destroy the molecules of fat and spread them around the mix. And we know the overrun means also a warmer and cheaper gelato! The technology used by this machine it doesn't include any blade. It works with the #PRESSURE of your liquid. The mix is sucked by the emulsifier through some holes, and it rejected through some other really small holes. This difference in the dimension of the holes, combined with the high speed, changes the pressure of the liquid, and allows us to "CUT THE MOLECULES". It is a unique technology!
