A delicious and paleo-friendly take on the classic Twinkie using chaffles as the base instead of traditional cake. These chaffles are grain-free, dairy-free, and can be filled with your choice of paleo-friendly cream filling.
Ingredients: 2 eggs. 2 tbsp almond flour. 1/2 tsp baking powder. 1 tbsp coconut oil, melted. 1 tsp vanilla extract. 1 tbsp honey optional, for sweetness.
Instructions: Set your tiny waffle maker to preheat. Blend eggs, almond flour, baking powder, coconut oil, vanilla extract, and honey if desired until a smooth consistency is achieved in a bowl. Transfer half of the batter into the waffle maker and cook for 34 minutes, or until golden brown and set, as per the manufacturer's instructions. Proceed with the leftover batter. After cooking, take the chaffles out of the waffle maker and let them cool slightly. Gently cut the chaffles in half lengthwise to form the 'twinkie' form. Stuff with your preferred paleo-friendly cream filling almond butter or whipped coconut cream, for example. Present and savor!
