Let’s face it, Red is literally just Kronk; change my mind.
Also, here’s the blank version below, just 'cause.
When they're having their boss fights with the protagonists, which member of the Ukki Five is having the most fun?
On average probably Red. He is a master of mastering skills for the sake of whatever mission he has been handed (Though he can only retain 2 or 3 at a time before he has to drop everything but fine dining and breathing like Spongebob before he can pick up another one) so any opportunity to test and push those skills he's picked up would be his favorite activity and if that activity is ALSO part of the mission than that's an extra gold star in his book!
If Specter was being completely honest, does he enjoy the chaos of his completely unfocused minions, or would he prefer a more coordinated fighting force?
Of course he would like his minions methods to be more successful, but that's be less fun and the chaos is stimulating for someone raised most of his life in a busy loud amusement park.
He'd like to be the kind of solitary villain who waits in a dark room... which he occassionally does when waiting for the protags to show up... but without the zaniness he's probably go nuts!
Is Ukki Blue befriending Spike, or do they interact because he's the only character who could possibly act normal at Spike in this environment and you needed someonefor him to talk to?
Part of Spike's character arc is going from seeing the Pipo Apes as mischievous animals whose mischief is enabled by the helmets, to seeing them as a type of people. Humanizing them if you will. That ends up with Spike befriending everyone around him, just as he does with humans. This includes Blue and the rest of the Ukki 5 (to a degree. He doesn't really 'befriend' White and Pink they just grow to tolerate him.)
Blue and Yellow were picked to return to the story the earliest because they would be the easiest to befriend, serving both the purpose of giving him someone to speak to (he also quickly befriends the Piposaru by playing HR with them in this part of the story but Spike can't understand 99% of them) and through befriending them Specter begins noticing the positive traits/actions in Spike, piquing his interest in the human.
(Also the subconscious territorial hilarity of the only of his generals he can dump the human he is growing interest in on are the two Ukki Five members that are known to not be against/preferring humans.)

Unfortunately Blue is that kind of asshole griefer friend. (I drew Blue way too big here....)
Could Specter just give Ukki Blue the Vita Z Banana treatment, or did Ukki Yellow eat literally all of them? (I assume there is some reasom why Specter doesn't just give them to all of his monkey minions) If Ukki Blue did get the treatment, what abilities would he gain?
A combination of all of the above. In order: -When Yellow took too many Vita-Z Banana's as a second dose he went on a complete rampage, so the potential that Blue could have a similar adverse effect makes it not worth the risk as rather than a complete single mutation it would be a second stacked mutation. -Because Specter developed the Vita-Z project during his time travel adventure he had all the time in the world to get set up. Yellow destroyed all of the facility and ate all of the backstock of Vita-Z bananas so it would take literally decades to rebuild the stock and facility to produce them. (Or else why wouldn't he have made more Ukki 5 in later games?) -If Blue had gotten the full treatment… I've been chewing on this for a while but I'm not sure. Whatever his mutation was GOING to be those long limbs of his would have had to be working towards that end goal. I could cop out and say "Super Speed" because most of his fights in game involve his Unicycle and speeding around, but with the fact that in Nannersverse he was previouslt the AE1 Ape Cool Blue and round swimming around in the ocean, maybe those long limbs would have made swimming easier and his mutation would have made him more aquatic? A Sea Monkey or real life Fiji Mermaid if you will!

Hypothetically, if during an Ape Escape boss battle one of the protagonists apparently Actually Die, which one of the Ukki Five + Specter are the most genuinely horrified versus the one most likely going "dangit, I bet someone is going to yell at me about this. >:( "
I think the one most likely to be horrified at the seeming death of a protag as the result of a boss battle would be Yellow, in like a "Oh god I was driving and I ran over somebody's cat! It had a collar and everything that wasn't even a stray! THat was SOMEBODYS CAT IT HAD A NAME!!!!!!" way.
Specter would probably be next on the list but he would wear it well until he goes to sleep and starts getting tale-tell hearted by his own guilt, which he would then be haunted for for all eternity because he is too egotistical to even consider that he feels guilt for the annialation of his enemies even though most of his plans are just about making it so humans can't fight back rather than a hostile gun toting genocide of their more evolved cousins.
Blue would be next in a "..Shit…. SHIT! I killed them! Shit!" way but after a good night sleep he'd mostly get over it.
Red would be next up. He wouldn't feel completely awful at killing an opponent in a boss fight, as they should have known the risks before jumping into the ring against him. Respect for a good opponent though.
White and Pink would be tied for most "Dangit… someone is going to yell at me for this." They are the two that have absolutely no love for humans in general. While White's dislike of humans can be a little fliexible, like someone who hates cats having a room mate who owns a cat and isn't going to be cruel to the cat in question (Like his relationship to Spike quickly earning his respect for keeping Specter safe in the Stupid in Space storyline) Pink can be downright hostile to any human. If they're not cheering her name at a concert she has no use for them and will just throw them off a cliff if she feels like it, stemming from her mistreatment at the Park.
