These vegan spicy sweet chili noodles have just the right amount of sweet, sour, and spicy flavors. Put them together quickly, and they'll fill you up.
Ingredients: 200g noodles. 1 tablespoon olive oil. 2 cloves garlic, minced. 1 red bell pepper, thinly sliced. 1 green bell pepper, thinly sliced. 1 carrot, julienned. 3 spring onions, chopped. 1/4 cup sweet chili sauce. 2 tablespoons soy sauce. 1 tablespoon sriracha sauce. 1 tablespoon maple syrup. Salt and pepper to taste. Sesame seeds and chopped cilantro for garnish.
Instructions: Follow the directions on the package to cook the noodles. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Add the minced garlic and cook for one to two minutes, until the garlic smells good. Red and green bell peppers should be sliced, carrot should be julienned, and spring onions should be chopped. After 3 to 4 minutes, the vegetables should be just barely soft. Put soy sauce, maple syrup, sweet chili sauce, and sriracha sauce in a small bowl and mix them together. Add the sauce to the vegetables in the pan and mix it together. Mix things together well. Add the cooked noodles to the pan and mix everything together until the noodles are covered in the sauce all over. Add two to three more minutes of cooking time until everything is hot. Add pepper and salt to taste. Add sesame seeds and chopped cilantro to the top of the hot vegan spicy sweet chili noodles.
