Lunch today is Weight Watchers Tortellini Soup at 4 points per serving. Really easy to pull together during the work week! Ingredients 1 tbsp olive oil 3 carrots, small diced 2 stalks of celery, small diced 1 small onion, minced 2 tsp minced garlic ½ tsp dried thyme ½ tsp dried basil 1 tsp greek seasoning blend or oregano salt and pepper 1 15oz can of diced tomatoes with juices 4 cups chicken stock 10 oz of Buitoni three cheese tortellini 1 cup baby spinach leaves Sprinkle of grated parmesan (optional. If you keep it under 1 tbsp per serving, it does not affect the WW point count) Instructions In a large stock pan, heat the olive oil over medium high and sauté the raw carrots, celery, and onions until soft. Add the garlic and seasonings and sauté until fragrant, 1 minute. Add the diced tomatoes and scrape the pan to release any browned bits from the bottom. Add the chicken stock and bring to a simmer. Cover and simmer for 15 minutes. Add the tortellini and spinach and cook for 5 minutes until pasta is cooked through and spinach has wilted. Serve with a sprinkle of parmesan cheese over the bowl.
