Boxing Day Teochew Hor Fan Because it’s Teochew, there’s the added ingredient of Kiam Chai (preserved mustard green), which imparts it distinctive sour piquancy. The Hor Fan (flat rice noodle) has been stir fried in a very hot wok, its wok hei is irresistible. Ipoh Malaysian Cuisine After tennis catch-up with Makcik Yoke Har @88spicesnz at Ipoh Malaysian Cuisine, Remuera. Being an accomplished Malaysian Tukang Masak, Makcik will be a great gauge as to what’s on the menu. Makcik didn't hesitate in choosing the Char Kway Teow. Having cooked CKT with aplomb at her Clevedon Farmers Market stall @88spicesnz, she rated her rice noodles. It is served as all CKT should - cooked with lard in a very hot wok until smokey (wok hei). Cooked with prawns, chicken, lup cheong, beansprouts and chives in dark soya sauce. Uncle has the Nasi Lemak, Malaysia’s national dish and perennial favourite. It’s a decent Nasi Lemak - the rice is indeed lemak (with coconut cream) and has pandan flavour; sadly it’s a bit dry. Happy to say though all the Nasi Lemak staples are there: ikan bilis, peanuts (with skin on), a flavoursome sambal, cucumber and boiled egg. Uncle has chicken curry with his Nasi Lemak. Our verdict: a passable Nasi Lemak but not one that hits the high notes, from the sambal to the curry. Dishes like Char Kway Teow need to be eaten hot, straight off the wok. The Hor Fan is singing with wok hei, cooked with kiam chye (preserved mustard green), a rich gravy and topped with your choice of sliced fish cakes, chicken or prawn or all if you're a fan of prawns.
