A tasty variation on the traditional hummus is Sun-Dried Tomato Cilantro Hummus. This creamy dip is enhanced with flavors reminiscent of the Mediterranean thanks to the addition of fresh cilantro and sun-dried tomatoes. It's great as a spread for sandwiches and wraps, as well as for snacking and serving as an appetizer at parties.
Ingredients: 1 can 15 ounces chickpeas, drained and rinsed. 1/4 cup sun-dried tomatoes, packed in oil, drained and chopped. 1/4 cup fresh cilantro leaves. 2 cloves garlic, minced. 3 tablespoons tahini. 2 tablespoons lemon juice. 2 tablespoons olive oil. 1/2 teaspoon ground cumin. Salt and pepper to taste. Water as needed for consistency.
Instructions: Put sun-dried tomatoes, cilantro, garlic, tahini, lemon juice, olive oil, ground cumin, salt, and pepper in a food processor and blend them all together. Mix the ingredients together until they form a thick paste. Add water in small amounts while blending to get the consistency you want. Blend it some more until it's smooth and creamy. If you need to, add more salt, pepper, or lemon juice to taste and adjust the seasoning. Put the sun-dried tomato and cilantro hummus in a bowl that will be used for serving. Add a little olive oil and a few extra cilantro leaves as a garnish. Grab some pita bread, fresh vegetables, or your favorite crackers to go with it.
