Enjoy this parfait, which has spiced pear and crunchy walnuts that go so well together. The layers of moist cake crumbles and smooth Greek yogurt make the flavors and textures work perfectly together.
Ingredients: 2 ripe pears, peeled and diced. 1 cup chopped walnuts. 1 tsp ground cinnamon. 1/2 tsp ground nutmeg. 1/4 tsp ground cloves. 1/2 cup brown sugar. 1/2 cup unsalted butter, melted. 1 cup all-purpose flour. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup buttermilk. 1 tsp vanilla extract. 2 cups Greek yogurt. Honey for drizzling.
Instructions: Preheat oven to 350F 175C. Grease and flour a cake pan. In a bowl, mix diced pears, walnuts, cinnamon, nutmeg, cloves, and 1/4 cup brown sugar. Set aside. In another bowl, whisk together melted butter and remaining brown sugar until smooth. Add flour, baking powder, baking soda, and salt to the butter mixture. Stir until just combined. Mix in buttermilk and vanilla extract until the batter is smooth. Fold in the pear and walnut mixture. Pour the batter into the prepared pan. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely, then crumble it into small pieces. In serving glasses, layer the cake crumbles with Greek yogurt. Drizzle honey over each layer and repeat until the glass is filled. Top with additional pear and walnut mixture and a sprinkle of cinnamon. Chill in the refrigerator for at least 1 hour before serving.
