Ingredients: 2 cups cooked shredded chicken. 1/4 cup Thai sweet chili sauce. 1/4 cup crunchy peanut butter. 1/4 cup shredded carrots. 1/4 cup chopped cilantro. 1/4 cup chopped peanuts. 4 large flour tortillas. 2 cups shredded lettuce. 1 cup cooked jasmine rice. 1/4 cup sliced red bell pepper.
Instructions: It's best to coat the chicken shreds in Thai sweet chili sauce and peanut butter before putting them in a bowl. Spread cooked rice out on a tortilla. Add the chicken mixture, then shredded lettuce, shredded carrots, chopped cilantro, sliced red bell pepper, and chopped peanuts. Turn the tortilla around so that the sides are facing the middle. Then, fold the bottom of the tortilla over the filling and roll it up tightly to make a wrap. Do it again with the rest of the tortillas and filling. Set the pan on medium heat and put the wraps in it seam-side down. As soon as one side turns golden brown and crispy, move on to the next. Cut the wraps in half and serve right away.
