Since I’m still doing power-outage recovery
I spent today cooking. I skimmed the fat off the top of the manymanyquarts of chicken stock I’d made, and then reboiled it (reducing it even more) while I ran Ball jars through the dishwasher, and then I pressure canned it--my very first time using a pressure canner! It’s more intimidating, somehow, than a pressure cooker is. Possibly because it’s more than twice the size of the pressure cooker I used to use at my ex’s place to make rice--this thing holds seven quart jars no problem, or something like eighteen pints. As a cooker it’s got a 23qt capacity, which is an insane amount of potential liquid suddenly coming at you in a skyborne tidal wave of scaldy doom. So now I have seven pressure-canned glass quart jars of chicken stock that can just sit in my pantry, and two frozen quarts, and I put half a quart or so into dinner tonight.
And I made the three pork loins which I managed to save during the power outage into chili. It cooked for seven or eight hours, and it is perfect, and I filled our bellies with it and still managed to put five quarts of it into the freezer. That’s a bunch of meals that Future Me won’t have to worry about, hopefully.
Tomorrow I’m taking the chicken meat from the two chickens I had to cook post-power outage (sigh) and making chicken-tomato-some-kinda-spice soup. Which will also be frozen.
