YES. they/them are often used to invalidate binary trans people, when i went by he/him i had many people say "well i dont think youre a guy so i'll use they/them to meet in the middle." even if thats not how you mean it that can be how it can come across.
if someones pronouns are he/him USE he/him.
if someones pronouns are she/her USE she/her.
Don't forget about neopronouns!!! There are people in the world who exclusively use neos and no other pronouns, and THAT'S NOT A THEY/THEM EITHER
