Green spinach curry by @curlewanddragonfly đź’š
Recipe: For the curry base blend: 2 handful of spinach 3 peeled garlic gloves 2 thumb sized pieces peeled ginger 2 stems lemongrass 1 lime leaf 1 tablespoon coriander seeds 1 tablespoon cumin ÂĽ teaspoon cinnamon 1 big bunch cilantro 1 green chilli 1 heaped tablespoon salt 3 peeled shallots 350 ml coconut milk Blend until very smooth and creamy.
500 ml Kimchi water or veggie stock 400 g broccoli , cut into flowers 2-3 handful of baby chards 1 big or 2 small red bell peppers , cut in squares Roasted chashews Black and white rosted sesame Some cilantro leafs Bring Kimchi water to boil and add broccoli and bell pepper. Cook for 2-3 minutes, then stir in the curry base and bring to boil. Take of the heat, stir in the chards , season with salt and serve with cashews, sesame and cilantro. Have it plain or with rice!
