🍁 70 Calorie Pumpkin Spice Cookies🍁
Hello loves! It’s that time of year again, so I decided to create this wonderful, low sugar, low calorie recipe for you all. Trust me, these are actually GOOD, filling, and can pass for normal cookies!
Ingredients:
3/4 cup flour (330)
1/4 cup oats (80)
1/2 tbsp baking powder
1 tbsp cinnamon (15)
1/4 tsp ginger
1/4 tsp nutmeg
3.5 tbsp butter (370)
1/4 cup brown sugar (60)
1/4 cup 0 calorie sweetener
Pinch of salt
1 tbsp vanilla extract
1 1/4 cup pumpkin puree (125)
1 large egg (75)
Directions:
1) Preheat oven to 375 degrees F (190 C)
2) Mix dry ingredients together in a large bowl.
3)Add butter (room temperature) and sugar, sweetener, salt, and vanilla, and mix until combined.
4) Add in pumpkin purée and large egg, mix until combined.
5) Bake on a parchment paper lined baking sheet for 11-13 minutes. Let cool and enjoy!
Each cookie has ~70 calories! Recipe makes 15 regular sized cookies.
