This dish defines southern and especially Low Country cuisine. Grits are an absolute staple of the spread in the south. Many popular foods in the south are made with preservation techniques (in this case drying, but also pickling and jarring) that originated with subsistence farmers and rural folks before refrigeration. Dried corn is an obvious solution to long term storage woes of this staple crop. And like many dishes in the south, utilizing what you have is key, so in the case of this low country champion, the sea provides the bounty. We love our version, made with Anson Mills heirloom grits, aged white cheddar cheese, and spiced up with a buttery and super savory shrimp broth with some sausage and peppers for good measure. The names for these little cakes are as varied as the recipes, but they generally all have one thing in common: cornmeal. Here is a lovely picture by the amazing @jessnash of our heirloom wheat johnnycakes made with anson mills flour and cornmeal. Travelin' cakes or even saddle cakes is yet another name, as they travel well and could be packed in a saddle bag and eaten on a long ride. There is even solid evidence that troops on both sides ate hoecakes during the civil war. Our finished product is a little different, with spicy persimmon molasses and adorning our brick chicken, but they are still part of a wonderful lineage of the southern corn cake. #Repost @theheyward ・・・ @altaeditions here is a photo of some toasted benne! It is a lovely little seed - piquant, earthy, and very flavorful. Not to be confused with sesame though; heirloom benne is much more nutritious and flavorful! These seeds have a great history. Another ingredient brought to the new world by West Africans! They grew it in their forbidden gardens and used the whole plant. Leaves were pounded to extract flavor, and added to stews as a thickener. The seeds make a fantastic oil, and were used to flavor rice, make a lovely flour (called bennecake flour), and to sprinkle over everything from soups to salads, to add much needed nutrients. I love to use them to add crunch and earthiness to salads, likewise for fish, and I use bennecake flour from Anson Mills to make beene seed wafers too!
