This is for all the single girls and even the married girls out there. We all can be honest and say that we have/had a Pinterest board full of our dream wedding, shower ideas and all the little ideas planned for the big day. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ The amount of things that go on in planning a wedding can be overwhelming but the best part is seeing all your hard work on display on wedding day. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ The first thing we did after getting engaged and having a small engagement party was booking a date. Now you make think oh it’s so simple to be like oh “April 25th because it’s not too hot and it’s not too cold!” But sadly it’s not always what you want it is what is available. Then on top of that you have to make sure the venue and the church are available for the same day and coordinate the times. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Now your like okay, that’s easy right?! Nope, it doesn’t stop there. Now you have to make a game plan of how the day could possibly run. What time are the caters going to serve food? Is there going to be a cocktail hour? Where are we going to take pictures in between? Should the mariachis be before, during or after dinner?! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ That’s the fun part of planning but for sure the church and the venue is the most important thing to do first! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Next on the list is engagement pictures. Now everybody doesn’t always take them but it’s such a special time and a fun way to celebrate. Some people keep it simple and others get creative. It seems like just yesterday I was waiting around to meet someone that would change my life around. Sometimes you have to wait a while to meet someone but in the end it is so worth the wait. Being in relationships are great. Being engaged is an exciting time. Being married is a whole different ball game. It is full of lots of love, lots of laughter and in between some fights and tears. Because hey, sometimes your husband forgets you hate mustard in sandwiches and sometimes you just can’t have him using the decorative towels. But that’s marriage. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ My journey towards walking down the aisle was so much fun! Everyone says that weddings are so stressful and yes I do agree but it is also what you make it. Stay tuned for tips and things to be sure to do when your big days comes. Promise when your time rolls around you will make it one of your greatest experiences and include your fiancé. Texas Hill Country Getaway ♥️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ So my husband and I recently came back from my best friends wedding and OMG if you have never been to Fredericksburg it is adorable! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ We stayed at the Fredericksburg Inn & Suites and had such a great experience there! It was perfect walking distance from the main area where there was tons of shops, bars and restaurants. We stopped at a few of these places and heard about some others but didn’t get to try them out! Hey Y’all! So I was craving something healthy but also extra yummy and found this vegetarian recipe!!! It actually didn’t involve a lot of prep and was super delicious! I’m catholic so this was a perfect idea for lent! I will say finding the jumbo shells and fresh basil was a task but I finally found them both! If you do get to make this please post and share this post! Spinach & Ricotta Stuffed Shells 🐚 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients 16 jumbo pasta shells (Cook a couple of extra shells to allow for a few breaking while the pasta cooks.) 1-1/2 tbsp olive oil 2 tsp fresh garlic, minced 4 cups (packed) fresh spinach leaves, roughly-chopped 12 oz skim-milk ricotta cheese 1 cup shredded skim-milk mozzarella cheese 1/2 cup grated Parmesan cheese, plus more for serving 1 large egg 1 tbsp fresh basil, finely chopped 1 tsp kosher salt 1/2 tsp freshly-ground black pepper 1-1/4 cups marinara sauce Instruction ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Preheat the oven to 375 degrees F. Cook the pasta al dente, according to package directions. Drain and set aside. Meanwhile, heat the olive oil in a large skillet over medium-high heat. When the oil begins to shimmer, add the garlic and cook until it begins to brown, about a minute or two. Add the spinach and cook, stirring occasionally, until the leaves begin to wilt but are still bright green, about 3 to 4 minutes. The spinach should be reduced by half. Remove from the heat and let cool. In a mixing bowl, stir together the spinach, ricotta, mozzarella, Parmesan, egg, basil and salt and pepper until thoroughly combined. Pour 1/2 cup of the marinara sauce into the bottom of a shallow 8-inch by 8-inch baking dish. Stuff each pasta shell with a generous amount of the spinach and ricotta mixture, and place in the baking dish. Cover with the remaining sauce and bake covered with aluminum foil for 25 minutes. Remove the foil and continue baking until the top begins to brown and the sauce begins the bubble, another 10-15 minutes. Serve warm with a dusting of Parmesan. Oh my gosh y’all! These past few weeks have been crazy busy but I have so much to tell you about!!! What’s better than carb loading during spring break?! Eating bread! Lol These cinnamon rolls and garlic knots are seriously amazing. Are they healthy?! Ummm no absolutely not but they are an awesome and easy recipe to try if you have never made anything homemade like a bread! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ So I don’t have the written recipes I just have the pictures in an old cookbook of a friends but these are a must try and I will say I impressed myself for conquering my fear that it would come out bad!
