What are tacos?
A taco is a traditional Mexican dish consisting of a small hand-sized corn or wheat tortilla topped with a filling. The tortilla is then folded around the filling and eaten by hand.
A Masterpiece!
Authentic Mexican tacos are made of stewed, fried, or grilled meat. The grilled meat is marinated overnight with cumin, oregano, paprika, lime, onions, and chilies. The cooked meat is lightly seasoned with nothing but salt and pepper. American tacos usually involve baked chicken or baked pork.
Tacos de Birria
Tacos de Birria and Birria specifically is a Mexican dish from the state of Jalisco, Mexico. The dish is a spicy stew, traditionally made from goat meat or mutton, but occasionally from beef or chicken. I have yet to try tacos de Birria, but you best believe I am soon!
Summer
Summer is always a good time. Nothing more exciting than hanging out with friends and trying out new tacos spots! Here I am after day 1 of the Tacos & Tamales Fest in Pilsen. Im pretty sure I ate around 10 tacos that day.
Al Pastor
Tacos al pastor are tacos made with split pork meat, they are also my favorite. The pork is marinated in a combination of dried chilies, spices, pineapple, and typically achiote paste, then slowly cooked with a gas flame on a vertical rotisserie called a "trompo". It common that most restaurants don't serve al pastor on the vertical "trompo", however the few that do are all amazing.
Here is a picture of Los Comales booth in last year's Tacos & Tamales Fest in Chicago. Taqueria Los Comales is another favorite of mine because the cecina tacos are one of the best I ever had. Even though you have to order at least four tacos because of how small they are, I find them so good.
El Milagro
One of my favorite taquerias has to be Taqueria El Milagro located right next to its tortilla and masa distributor on 26th Street, Chicago.
Out of the huge variety of meats, my personal favorites are pastor, cecina, and asada. Of cource you have to add that salsa verde to give it a perfect blend of spice and flavor.
The art of food. I believe it takes a certain level practice to master the art of making tacos al postor. This tedious porcess is truly art.
