Today’s music discovery.
Day 14. Sometimes we take for granted the many blessings we receive on a daily basis. This weekend I reflected a lot and I am grateful for my amazing boyfriend, who is very thoughtful and caring; my family, who have shaped my values, and my will to keep going and striving towards what I am most passionate about. Thank you God for these and many more blessings.
Day 13. Tender Steak Fajita Salad. This is my own recipe so no links. Basically, I sliced the steak into long strip, drizzled olive oil and added sea salt and freshly grounded pepper. In a skillet set to medium low, I let the steak cook for about 5 min, then I added a quarter of sliced onion, half of orange and half pf yellow bell peppers, quarted tomato, cilantro leaves and two scallions. I let it slowly cook for about 15 min and the last 5 minutes I turn up the heat until all the juices are disolved. Finally, I set on top of a bed lettuce and enjoyed.
Day 12. Kale, Apple & Quinoa Salad. I made this salad as a side dish to go with Salmon.

I usually post a motivational quote, but today I am taking advice from myself. Every idea I think of this week, whatever it may be, I will act on in that moment that I think of it. I will not procrastinate. I will take action.

Day 10. BLT Salmon Salad with Avocado Dressing. I replicated this recipe but excluded the bacon. As always, the dressing makes all the difference.

Day 9. Cilantro Lime Chicken Salad + Mango Avocado Salsa. The salsa was oh-so-good, and they combination of sweet and salty within the ingredients worked really well. I will definitely repeat this salad.
It checks off a whole lot of good-for-you boxes (and can be made in even the most minimal of office kitchens). Here’s how I like to make my concoction.
Day 9. I found this recipe scrolling through my Pinterest feed and thought I’d share it. Basically anything that promotes good skin and is healthy, I’ll give it a try. I’ll post some pictures later and comment about the taste.

Day 7. Blackened Shrimp Salad. The original recipe included asparagus and avocados, but since I didn’t have asparagus and the avocados were not ripe, they were excluded from the salad. Regardless, it was a very tasty salad and the dressing definitely makes a difference.
