How To; Make Gluten Free Christmas Pudding
Ingredients
1kg mixed dried fruit
1 tablespoon mixed spice
1 teaspoon ginger, ground
1 teaspoon cinnamon, ground
1 teaspoon cloves, ground
400 ml brandy
1 tsp brandy
180g butter, at room temperature
1/3 cup brown OR coconut sugar
3 eggs
3 cups gluten free breadcrumbs
1/3 cup gluten free OR coconut flour
melted butter, to grease pudding bowl
Combine dried fruit and spices in a large bowl. Stir in 400ml brandy, cover and refrigerate overnight. Next day, grease a large pudding bowl (1.5 litres /6 cup) with melted butter and line base with a circle of baking paper. Beat butter, sugar and 1 tsp of brandy in a large bowl until pale and creamy. Add eggs and beat until well combined. Mix in soaked fruit mixture, fresh breadcrumbs, flour and stir well until all mixed together. Spoon mixture into prepared pudding bowl and cover with baking paper, then foil and tie a double piece of kitchen string under rim of pudding bowl to hold in place. Place pudding bowl into a large saucepan of simmering water one-third full on top of a upturned heatproof saucer and ensuring water only reaches two thirds side of pudding bowl. Cover saucepan with lid and simmer pudding for 2.5 hours. Remove pudding from simmering water and set aside for 10 minutes before turning out onto a serving platter.
Texture In Food
One thing we realised early on in our journey to being creative's, is how important texture is in an image. It adds personality and depth to the content of your image, and is one of the main things that helps woo your audience into coming back for more. This is particularly important in food and lifestyle photography - without highlighting the texture within the image, you completely loose the life of the subject you're photographing. Focussing on textures means that you're able to aid in showing off form, patterns, light and colour. These are all key factors in making an image look interesting and unique. Two words - fermented veggies. These two intriguing words mean pro-biotic goodness for your belly! By eating these slightly aged veggies you are introducing beneficial bacteria in to help balance out your digestive system. Having a balanced gut means you are able to absorb more nutrients in the foods you eat, if it's not junk food! The other great thing about fermented veggies is that you can make them cheaply from home. However, if don't have the time or culinary skills, all health food stores will sell huge jars of the stuff! Oh Ancient Grains, you have done it again! This beautifully textured Organic Gluten Free Porridge, is a one to be a part of your weekly breakfast menu. Made up of Organic brown rice, amaranth, quinoa, rapadura sugar, vanilla and cinnamon, your stomach will do nothing but love you for the rest of the day! If you feel like treating yourself a little bit more, make sure you add their organic maple syrup on top as well.

Yes, that's right, we made sugar coated peanut butter cookies! As well as bringing back a classic from our childhoods, we are also bringing them back in a healthier fashion. These deliciously textured cookies are coated with Rapadura Sugar. What's that you say? Well it is the pure juice extracted from sugar cane which is then evaporated over low heats. This means the molasses hasn't been taken away from the crystals that are left over and makes for one of the tastiest un-refined sugars we have tasted.

These glorious, golden, sun-like shapes are Dried Mango Cheeks. Deliciously healthy, they are preservative and additive free, so you can pack these slices of tropical goodness, as a mouth watering snack in your lunch box! Oh, and did we mention that they are from Australia's own paradise state, Queensland?! Must be why they are so damn flavoursome!

Go down and meet the very friendly and understanding people at The Source, Camberwell. Then take home a bag of their weekly special, Organic White Quinoa. When home just make a simple porridge and add your favorite toppings just like we did! Ours is Vanilla porridge with pistachio, honey and fresh fig! So satisfying!

Though slightly unattractive, these brown and white logs are packed with goodness, and the best thing about them is they are made up of only 2 ingredients; organic coconut and dates. They are tasty enough on their own, but if you feel like treating yourself, add them to a light cracker with your favorite cheese. We highly recommend this option!
This weeks special at @thesourcecamberwell is the date & coconut log. We thought it teamed up perfectly with a mild cheese and selection of crackers, so yum! Also lucky it was one of those rare sunny days we've had this grey winter.

Cacao you godly beast! You can become many, many, many heavenly things, and we thank you for it. Healthy or devilish, you are nothing but amazing when you enter the gates to our stomach. Especially when you come in a gooey chocolate pudding form.
