Have some left over rice and veggies from lettuce wraps or stir-fry? This is a quick and easy way to repurpose these left overs for a filling and healthy lunch!
Ingredients:
• approximately 2 cups of cooked sticky rice
• 1 tablespoon of sesame oil
• 1 tablespoon of rice vinegar
• 2 tsp sugar
• 2 sheets of nori
• a variety of your favorite veggies and fruits, julienned (I used cucumber, avocado, bell peppers, green onion, and carrots)
• 1 tablespoon of freshly toasted sesame seeds
• 1tablespoon of chia seeds
• soy sauce and sriracha for dipping
Directions:
1.) Mix all the sesame oil, rice vinegar, and sugar in a small bowl until the sugar is dissolved.
2.) Pour the vinaigrette over the rice, then throw it in the microwave for two minutes.
3.) Lay out your nori sheet, matte side up, on a dry, flat surface. Evenly spread the warm rice in a half-inch thick layer on the nori.
4.) On one side of the nori, place the julienned veggies and fruits. Be sure to make the thickness uniform.
5.) Sprinkle the chia seeds over the rice and fillings.
6.) Roll it up and seal the end with your finger dipped in a bit of water.
7.) Slice and serve with a spicy soy dipping sauce.
