Tonight we dine on sushi!
We are eating REAL sushi tonight!
Super Easy, Super Good Salsa by Henry
Ingredients:
14 oz ripe tomatoes
1/2 of a 4 oz can of diced green chiles
1 clove of garlic, smashed
1 leek, all the white and half the green, rough chopped (you could use onion or scallion, too)
1 small handful of cilantro
1/2 cup lime juice (or juice of 1 lime)
1 teaspoon honey
3/4 teaspoon salt
1/4 teaspoon cumin
Add everything to a good blender or food processor, whir until smooth. If you like it spicy, add 1/2 -1 fresh jalapeno, or lots of tapatio hot sauce, like we did.
Henry tasting his first ever batch of salsa. Turns out, making the salsa in the food processor is fun, even if you don't like salsa.

Henry’s beets and cucumbers for dinner
Henry's Beets and Cucumbers (It's two recipes, not together!) The beets 3 beets, tops trimmed and cut so the pieces are all the same size. Place in a 2 quart microwave safe dish with a lid. Add about an inch of water to the bottom. Steam until fork tender. Allow to cool and gently remove the skin. Slice up the beets and add about a Tablespoon of butter and stir to melt. Here's the secret ingredient: Panera Raspberry Dressing! Toss the beets with about 2 Tablespoons of the dressing. Delicious!!
The cucumbers Peel the cucumbers and slice the long way. Scrape out the seeds because they are gross. You can use a spoon for that. Slice the cucumbers into smiles. Make a ranch dressing by adding water to the bottled stuff and add some dill from the garden. Stir it up and eat it.
