I have a theory about this so buckle up

Bella has issues with blood only in the first book, at the end of Twilight she’s bitten by James and his venom is going through her system for awhile before Edward sipped her like a Capri-sun

After that the bite was always colder and looked the same as all of Jasper’s bites, she mentions this in Eclipse I’m like 90% sure and I think that’s because the venom changed the area to be more vampiric

So what if Edward didn’t get all of it? What if there was no longer enough venom left to make the change but just enough to do some things, like change her skin in that area and make blood more appealing? And over time it becomes more acute especially with any venomous saliva she might be swapping with Edward later making more accumulate in her system

It’s why in New Moon she’s fairly blase until Jacob points the cut out and in Eclipse slicing her arm to make a distraction didn’t bother her at all, and then in Breaking Dawn she’s got even more venom in her system due to Resume and so the idea of craving blood no longer bothers her in the slightest even though a year earlier just smelling blood in bio was making her faint and be disgusted by the smell.
