Pochita, since combining with Denji, has not had a fully independent mind. They merged, and in so doing, didn't become two minds in one body, rather, Pochita is one fragment of Denji’s shattered psyche. This is most evident not only in how Pochita reappears as Denji’s heart in 232, but more so in the fact that Power can heal Denji using blood, something which should only work on devils.
Pochita then becomes, in Denji’s eyes, a symbol: of identity, of love, of freedom. He spends part 2 begging to express that freedom in a destructive, unfocused way, as even he does not understand what that identity truly is.
The series’ conclusion, then, is him achieving the identity of chainsaw man not through the chainsaw devil, or through the chainsaw weapon, but by discarding the weapon, and just being kind to Asa.
Truly, the real chainsaw man is the friends we made along the way.
