Whole Wheat Carrot Cake | Healthy Wheat Carrot Cake | No Butter , No Eggs | Super Moist Carrot Cake

Today I am sharing a healthy Carrot cake recipe using Whole Wheat Flour.
The cake is rich with the goodness of carrots, orange, walnuts and raisins.
I have added plain caster sugar to this recipe , if you want to go completely guiltfree,
you can prepare this cake using the same amount of powdered Jaggery or Coconut Sugar or Organic Sugar.
This is a deliciously light cake and because it has not butter it stays soft in the refrigerator for upto a week. I have made it in a loaf tin, a 9 inch round or square tin will also do.
The frosting I made using greek yogurt and maple syrup which is a great combination for a healthy cake.
Enjoy this guiltfree cake with a cup of tea or coffee.

1 tsp Baking Soda
1 1/2 tsps Baking Powder
1/2 tsp Salt
1 tsp Ground Cinnamon
1/2 tsp Ground Ginger
1 1/2 cup Grated Carrots
1/2 cup Chopped Walnuts
2 tbsps Raisins
1/2 cup Sunflower Oil
1/4 cup Curd
3/4 cup Caster Sugar (Coconut Sugar/Jaggery Powder for healthier alternatives)
1/4 cup Orange Juice
Zest of 1 medium Orange
1 tsp Vanilla Extract
Frosting
1/2 cup Greek Yogurt or Hung Curd
1/2 tsp Vanilla Extract
2 tbsps Maple Syrup/Honey
