Black eye peas, bodi (string beans), sweet potato and turmeric green paw paw stew. The star of this meal was the turmeric green paw paw (papaya) stew. It is eaten in the West Indies/caribbean as a side vegetable stew (fruit, pseudo vegetable). I have come to love and enjoy it. This one was appealing to the eyes with it's beautiful orange hue because it started to ripe. Tomato Choka 5 small/ medium tomatoes (roasted) 1/2 medium onion 4 cloves garlic 5 green and red seasoning pepper (not hot pepper) 2 Tbsp coconut oil (or olive) 1 tsp fresh parsley (optional) Peel roasted tomatos, mash it, grate in garlic and seasoning peppers, fine slice and add the onion, drizzle in cold pressed coconut oil and add salt and pepper to taste!
