Why PrincePaladin and not just DarkMilk

Mostly because of status and accuracy!

Milk Cookie being the Herald of Victory makes him very respected as Heralds were considered very important, and richer people like Young Prince Dark Choco Cookie were more likely to date at or above social status

Prince Dark Choco Cookie is also uncorrupted, which makes him easier to find for Milk Cookie

Maybe they would have found each other due to Purple Yam Cookie's loss? Was Dark Choco Cookie corrupted when he won against him? I don't know, but it's possible they could find each other that way in an alternate universe
