Whole grain seeded rice with buttered snails, avocado, and black beans.

For the rice:

1. Brown rice 2. Mixed seeds 3. Spinach 3. Parsley

1 cup rice to 1 cup boiling water. Fry a smashed clove of garlic in olive oil. Fry the rice for a minute before adding the boiling water. Cook over low fire for 15 minutes and let rest for 5 minutes. Stir in half a bag of wild spinach over low heat. Stir in 75g of seeds (sunflower, pumpkin, pine etc.)

For the snails

Stuff the snail shells with butter mixed with fresh thyme. Bake for 15 minutes.

For the beans

Slice the onion and fry. Fry the beans until they're properly cooked.

Serve with a spicy salsa and chopped avocados. Assemble on plate.
