I don't think Stiles is bi at all. He's never really shown any interest (romantically) in guys, and if the writers had him say "I'm bi" I'd be irritated because there isn't really any evidence (Sterek shippers, let me say what I think! Calm down!) of that. Sure he cared about Derek but him being bi would be a stretch for me and would feel like fanservice.
ONE
The default setting for people is not straight. No one is just “straight until proven otherwise.” Now I’ll be the first to admit that I want more than heavy-handed hints when it comes to Stiles’ sexuality. It’s blatant that Danny and Mason are gay. It’s clearly shown that Brett swings both ways and it is full on stated that Caitlin did as well. I want that level of explicitness with a main character. But just because we haven’t had that (yet) does not mean that we haven’t had anything to indicate that Stiles is not heterosexual.
TWO
Stiles hasn’t shown a lot of interest in many people (romantically). We’ve only seen him in one relationship and that’s with Malia (and I’m not even getting into the novel of reasons why that’s a nightmare). Besides Malia, we know he was interested in Lydia. In 1x08, Stiles says he’s been obsessing over Lydia since the third grade. And then in that same episode he says she’s the “one girl” he ever liked. So between 3rd grade and 10th grade, there weren’t really any girls that Stiles was expressing romantic interest in except for Lydia. And nothing ever came of his feelings for Lydia. Other than that, Stiles has only had 2 “romantic” encounters - withHeather and Caitlin. And both of those girls came onto him first with a surprise kiss at a party. That’s only 4 people and yes they were all females, but if he hasn’t yet personally accepted or truly thought of his sexuality then I don’t think that’s a surprise. So is Stiles attracted to girls? Sure! But that certainly doesn’t mean he hasn’t shown a curiosity and interest in guys.

That scene in 1x03 when Stiles tries to nod at a girl, gets rejected, and immediately does the same thing to an openly gay character at the table:
That other scene in 1x03 when Stiles is very concerned with whether or not an openly gay character likes him and whether or not gay males find him attractive and gets upset when he doesn’t receive an answer:
STILES: I don’t think Danny likes me very much.
SCOTT: I ask Allison on a date, and now we’re hanging out.
STILES: Am I not attractive to gay guys?
SCOTT: I make first line, and the team captain wants to destroy me, and now—now I’m gonna be late for work.
STILES: Wait, Scott, you didn’t - am I attractive to gay guy - you didn’t answer my question.
That scene in 1x05 when Stiles is still wondering if he’s attractive to boys or not so he asks an openly gay character if he finds him attractive:
STILES: One more question.
DANNY: What?
STILES: Do you find me attractive?
That scene in 2x03 when Stiles “jokingly” asks his male friend to make out with him:
STILES: All right, I’m with you. And I also gotta say this new - found heroism is making me very attracted to you.
SCOTT: Shut up.
STILES: No, seriously. Do you wanna just try making out for a sec? Just to see how it feels.
That scene in 2x06 when Stiles actually gets jealous that his friend was bought a drink in a gay club and he wasn’t:
WAITER: That one’s paid for.
STILES: Oh, shut up.
SCOTT: I didn’t say anything.
STILES: Yeah, well, your face did.
That other scene in 2x06 when Stiles is legitimately offended that his father doesn’t think he could be gay:
SHERIFF: Not exactly your type of club.
STILES: Uh - well, dad - There’s a conversation that we -
SHERIFF: You’re not gay.
STILES: Wha - I could be.
SHERIFF: Not dressed like that.
That scene in 3x04 when Stiles is flattered by the offer to have sex with a male after yelling out in a boys locker room that he wants to have sex:
STILES: Missing and presumed dead because he’s probably a virgin, Scott. And you know who else is a virgin? Me. I’m a virgin, okay? And you know what that means? It means that my lack of sexual experience is now literally a threat to my life. Okay, I need to have sex, like, right now. Someone needs to have sex with me, like, today. Like, someone needs to sex me right now!
DANNY: All right, I’ll do it.
STILES: What?
DANNY: Come to my place at 9:00. Plan to stay the night. I like to cuddle.
STILES: Oh. That was so sweet. Are you kidding?
DANNY: Yes, I’m kidding.
….and then when he’s offended that it was only a joke:
STILES: Okay, you know, you don’t toy with a guy’s emotions like that, Danny. It’s not attractive, all right?
That scene in 3x16 when Stiles is point-blank asked if he likes boys, he pauses thoughtfully, looks perplexed… and never responds:
STILES: Uh, I thought you liked girls.
CAITLIN: I do like girls. Do you?
STILES: Absolutely.
CAITLIN: Great.
STILES: So you also like boys?
CAITLIN: Absolutely. Do you?
That scene in 5x03 when Stiles makes it very clear that he’d be supportive if his father was dating a man (paralleling the support his father did not show him):
STILES: The town of Beacon Hills won’t implode while you’re out with one woman. Or man.
SHERIFF: It’s a woman, Stiles.
STILES: Okay.
But, yeah, Stiles isn’t curious at all.
