Guys!! I made grape jelly w/ pineapple at the bottom. But the jelly did that thing. Why is it green?!!

Pineapples are kind of acidic - they have a pH of about 4-5, maybe a little lower if they came out of a tin with their own juice in it. They also contain lots of other chemicals including an enzyme called bromelain. Bromelain is an enzyme which breaks down proteins, including gelatine. The gelatine or whatever protein you’ve set your jelly with actually looks to be holding strong, so perhaps the bromelain in your pineapple has been denatured (probably through canning). Therefore I think it’s likely that some chemical in the pineapple, or simply its acidic environment has reacted with the food colouring in the jelly, causing it to go a weird greenish colour.
